Join us for a free, in-person cooking demonstration and showcase of cookbooks at C3! Learn how to prepare a recipe demonstrated by a local chef, then sample the dish and browse cookbooks related to the recipe and theme. The theme for June is cheesemaking with Margot Schwarz.

Come learn how to make a creamy French-style fresh chèvre cheese using goat milk. Attendees will learn about basic milk chemistry, cheese types, and cooking with and making cheese. We will make and mix different chèvre flavors and sample them at the end of class. Attendees will leave with the knowledge and experience to make chèvre cheese at home.

About Margot Schwarz: Margot is a food systems and community-building enthusiast, who enjoys helping folks become more connected with the land, food, and each other. She has taught cooking and food systems classes to adults and kids, focusing on contextualizing the food we eat and have access to in our communities. She is a food literacy advocate, passionate about nutrition, and studying to become a Registered Dietitian.

Margot loves milking and caring for goats, which has inspired her love for cheesemaking. She was born into a multicultural household and moved to the U.S. in elementary school, working on regenerative urban and rural farms, and cooking for farm-to-table restaurants as a way to build community and reconnect with her French roots. The cool thing about goat cheese is that you can make it soft or hard, silky or textured, sweet, or tangy; it’s modifiable, it builds an intimate relationship between you and your tastes and what you enjoy eating, and both intimate and shared experience of preparing and savoring food. It’s creative, it’s art!

This event series is co-sponsored by C3, Corvallis-Benton County Public Library, Corvallis Multicultural Literacy Center, and Corvallis Sustainability Coalition.
