Join us for a free, in-person cooking demonstration and showcase of cookbooks at C3! Learn how to prepare a recipe demonstrated by a local chef, then sample the dish and browse cookbooks related to the recipe and theme. In October, we will be learning about Peruvian cooking with Valery Cam. Valery will demonstrate how to prepare Ají de Gallina, one of Peru’s most beloved traditional dishes. This comforting recipe features shredded chicken in a creamy, gently spicy sauce made with ají amarillo (Peruvian yellow pepper), milk, bread, and pecans. A classic that can be traced back to colonial Peru, Ají de Gallina reflects a blend of Spanish and Andean culinary traditions.

About Valery Cam: I am originally from Peru and moved to Corvallis with my son about 12 years ago. Today, I live in the welcoming community of Philomath with my son and our two dogs. I work in Human Resources, but my true passion is sharing the flavors of my heritage. I teach Peruvian cooking classes at the Corvallis Multicultural Center once a quarter, where I enjoy introducing others to the richness and diversity of Peruvian cuisine.
